Another suggestion is to serve it with boiled potatoes, and warm rye bread. Or, she said, "Dump all this together, go to work and have a hearty meal when you return home." She likes to substitute the pork chops with Chicago brats for a change. She reveres cabbage as a "superfood," a natural gut disease fighter, she added. Today she enjoys being a stay-at-home- mom, but she had her own small business in the tattoo indus- try. She specialized in piercings and reconstructive breast tat- toos for women recovering from cancer. Her favorite motto is "keep on trucking" and that's her atti- tude as well. "It's OK to allow a bad day, a pity party, but they go away," she said. Her mother always said, "If you have a problem, solve it, and wait for the next one." Gut essen und prosit! From preceding page Ingredients: 2 large or 3 small pork chops 32 oz. sauerkraut (one big jar from Job Lot or one bag) 1 cup apple cider 1 beer (I use a 12-oz. lager or experiment with your favorite beer; a can of beef bouillon with 1 tbsp. of sugar works too) 2 bouillon cubes (beef, chicken, or pork) 1 heaping tsp. caraway seeds (crush a bit in a mortar to open the husks) 1 tsp. black pepper 1 large or 2 small bay leafs Apple cider sauerkraut Directions: 1. Wash and place pork chops in a large crockpot. Add 1 cup of apple cider, caraway seeds, bay leaf and pepper. Cook meat for about an hour or two. 2. Meanwhile, fork and separate the cabbage in a large strainer. Rinse cabbage slightly and push excess water with fork out of strainer. After an hour or so add sauerkraut and beer. 3. Mix cabbage top, push down with fork so everything is underwater and leave meat on the bottom. Cook for 7 hours on high, occasionally mixing. (Mix together meat with cab- bage after about 3 hours.) 4. Serve with boiled cut potatoes, or warm rye bread. You can also dump this all together, go to work and have a hearty meal when you get home.
