THE VALLEY BREEZE & OBSERVER | APRIL 24-MAY 1, 2019 SPRING IN THE VALLEY 2019 27 PAWTUCKET – Kinnan Dowie, the boy wonder who as a 12-year- old was named Rhode Island state champion for the national Healthy Lunchtime Challenge with his Mediterranean kebab wraps, win- ning a trip to see former First Lady Michelle Obama in 2014, is still cooking up a storm. We asked the 2015 contestant on Food Network's "Chopped Junior" future stars show to give readers some tips heading into the warmer season on how they can liven up their grilling experience. Dowie, a grilling enthusiast him- self, picked some of his best prac- tices to highlight. • Learning the difference between direct and indirect cooking is an important skill, said Dowie. "If you don't know how these differ, it will become very com- mon that you either overcook or undercook your food," he said. "If the food takes less than 20 minutes to cook, use direct heat; if it takes longer, use indirect heat." • An important thing to know about the American classic, the burger, is it tends to puff up in the middle as it cooks, making the tops rounded and awkward for piling on condiments. "If you want to avoid this, make a little indentation into the top of each raw patty with your thumb or the back of a spoon," said Dowie. "Then, as the center pushes up, the top of each burger will be relatively level." • Anything can be grilled, espe- cially vegetables, Dowie empha- sizes. "Corn on the cob, asparagus, pep- pers, and even onion slices make for some great sides," he said. "To prevent them from drying out and sticking, lightly coat them in olive oil before grilling." • The trick to making a perfect steak is getting an amazing sear on all sides, says Dowie. "After you marinate your steaks, pat them dry on both sides. Wet steaks don't sear; they steam," he said. "Also, resist the temptation to lift the lid and turn the steaks over. You develop the richest flavors in steaks when you leave them alone, turning them just once or twice." That same principle goes for most proteins. "The less movement, the more caramelization, which in turn leads to more flavor," he said. "And who doesn't love a great tasting piece of meat, right?" • When building a marinade, start with the basics, Dowie says, including a little acid, such as lemon juice, vinegar, or mango chutney, mixed with a small amount of olive oil and fresh herbs. "Something so simple yet it pro- vides so much flavor to whatever protein you have," he said. He said he usually starts with a 1:3 ratio of acidity to oil, just like in salad dressings. "The acidity tenderizes the food and contributes a slight tang, while the oil provides richness and mois- ture," he said.
